2 cups cashews, soaked in water for 8 hours or more
Drain and set aside
8 tbsp. sugar
6 tbsps. unsweetened cocoa, like Hershey's
1-teaspoon instant coffee granules
pinch of salt
In twister jar, blend drained and rinsed cashews with water to form a smooth paste. Add sugar, cocoa, salt, coffee and vanilla. Blend until combined. Spoon into four serving dishes and refrigerate. Serve chilled. Enjoy!
Optional: Top with whipped cream, chocolate chips or chopped cashews.
