2 cups strawberries, diced
2 teaspoons granulated sugar
12 ounces plain Greek yogurt
6 ounces cream cheese, room temperature
1-teaspoon vanilla extract
1/2-cup confectioner's sugar
1 ounce Triple Sec Liqueur (optional)
4 Martini or parfait glasses or any beautiful glass of your choosing
In a small bowl mix the diced strawberries, granulated sugar and optional ounce of Triple Sec liqueur. Place in the refrigerator to macerate at least 1 hour.
Place the room temperature cream cheese in a bowl; Beat with and electric mixer until fluffy.
Add the Greek yogurt, vanilla and confectioner's sugar to the cream cheese and beat on medium until smooth and creamy.
In martini glasses, layer the strawberries and cheesecake batter, ending with the strawberries on top.
Chill in the fridge for at least 1 hour
Optional: Top with fresh halved strawberries, graham cracker crumbs or a mint leaf
