The Mojito is a Cuban highball made from rum, fresh lime juice, and mint. It is one of the most popular of the rum based drinks and we are great fans of this light and refreshing cocktail.
6 ounces light rum
12 mint sprigs
6 tablespoons fresh lime juice
4 tablespoons sugar
4 slices lime
Muddle (crush together) the mint leaves with the lime.
Place ice in a beverage shaker; add rum, muddled lime juice, mint and sugar. Shake well and serve over ice in a high ball glass. Top off with a splash of club soda.
Garnish each with an additional slice of lime and a sprig of mint.
