Although peaches aren't tropical fruits, they work very well with coconut milk in this rich, decadent–tasting smoothie. Other fruit such as apricots, mangoes, bananas or papaya may be used instead of the peaches.
4 large, ripe peaches, peeled, halved, stoned and cut into wedges
1 cup canned coconut milk
A few drops of pure vanilla extract
2 tablespoons sugar or to taste
Freshly squeezed juice and zest of 1 lime, cut into long shreds
6 ice cubes
Put the peaches in a blender, add the coconut milk, vanilla, sugar, lime juice and ice cubes and blend until smooth. Taste and add extra sugar if necessary.
Pour into chilled glasses, topped with the shreds of lime zest and serve immediately.
