"A delectable treat anytime: moist rum raisin bars....Can you say Yummm!!!"

*Prepare ahead: In a small bowl -1 ¾ cup dark raisins soaked in rum for a minimum of 6 hours


½ cup light rum or bourbon
½ cup canola oil
1 ½ cup light brown sugar
2 large eggs
1 tsp. vanilla extract
1 ½ cups all purpose flour
1 tsp. salt


Preheat oven to 350 °F.
In a mixer, cream together brown sugar and oil. Add eggs one at a time. Gradually add remaining ingredients and pour batter into a greased 9 x 9 pan. Bake for 55 minutes or until an inserted toothpick comes out clean.
