fruit-salad

We love to serve this for brunch. The Honey-Lime dressing is delicious! Use any fruits that are in season.

Ingredients:

Dressing:
1/2  cup plain yogurt
1/4  cup fresh lime juice
1/4  cup honey
1 teaspoon grated lime peel

Assorted fresh fruits, cut into bite sized chunks, such as cantaloupe, honeydew melon, pineapple, papaya, strawberries, grapes, kiwi, blueberries, apples.

Optional toppings:
Flaked sweetened coconut
Slivered almonds, toasted

Directions:

Whisk the Dressing ingredients together in a small bowl to blend. Mix dressing into fresh fruit salad and let stand for 15 minutes to blend flavors. Sprinke with optional toppings prior to serving.

Cover dressing and fruit separately and chill until ready to serve, up to six hours.

Yield: 8 servings
