Sweet Curry Rice PDF Print E-mail

Ingredients

2 cups uncooked sticky rice
4 tablespoons honey
1-teaspoon curry powder
Pinch of salt
½ cup dried cranberries
½ cup diced apricot or peach
½ cup diced walnuts (optional)

Directions

Prepare sticky rice according to package instructions. Set aside.
Heat honey in saucepan on low heat until runny, approximately 2-3 minutes. Add curry and salt. Mix. Add dried cranberries, apricot or peach and walnuts (if using). Pour over rice and mix. Serve warm.

Serves about 8

Notes

Turmeric may be added or substituted for curry in this recipe.
