This casserole will be the star of your Thanksgiving sides. The crunchy streusel topping makes this casserole irresistible.
4-5 sweet potatoes, boiled and mashed
1/2 C sugar (optional)
1/2 C oil
1 tsp vanilla
1 C pecans, chopped (optional)
1/3 C margarine (can also use oil- slightly less than 1/3 cup)
1 C brown sugar
1/4 tsp cinnamon
1/2 C flour
Preheat oven to 350 degrees.
In a large bowl, mix the mashed sweet potatoes, eggs, sugar, oil, and vanilla. Place in a greased 9 x 13-inch pan.
Mix the topping ingredients together and crumble over the top of the sweet potato mixture.
Bake for 1 hour.
