The only Matzoh Kugel you will ever need, a delicious heirloom recipe created by a star cook, my mother of blessed memory. This simple recipe is my most requested family Passover recipe. Enjoy!
1 medium onion, chopped
1 lb. mushrooms, chopped
2 stalks celery, chopped
4 Tablespoons olive oil
3 cups matzoh farfel
1 ½ cups chicken bouillon, chicken broth or vegetable broth, or homemade chicken soup
1 /2 teaspoon paprika, salt and pepper to taste
1 egg, slightly beaten
In a large fry pan, sauté all vegetables in olive oil until soft and onions are translucent. Saute vegetables separately if time allows
Add the matzoh farfel and mix thoroughly
Heat liquid to boiling- pour onto farfel – Mix together gently – cool slightly, then mix in the egg and spices.
Spoon into baking pan and bake 350--about 35 minutes.
Serve warm – works well at the Seder alongside a chicken or turkey dish
