Sour Cream & Pudding
If you can't find the product you need − there is only one thing to do − create it yourself. And that is exactly what Kelly Coffin did. Growing up on his grandparent's dairy farm, Kelly was raised on dairy products – dairy farming has been in his family for generations. When he had a family of his own and found out that they needed to immediately eliminate all dairy from their diet, it was devastating.
Kelly and his wife spent time trying alternative non−dairy products and nothing measured up to what they were used to. So out of necessity, their goal was to create a safe, natural, dairy-free product – the requirement was that it had to be delicious, nutritious, healthy, non-dairy, and not contain any strange ingredients found in so many alternative products. And believe it or not, they found their answer from the most unexpected, natural source − oatmeal. From this source they made delicious non–dairy cheese and ice cream for their family.
Wanting to share their products with others, in 2009, in Bozman, Montana, WayFare Foods was launched. Today, WayFare’s dairy free cheese, ice cream, sour cream, and pudding options are carefully crafted using 100% natural whole grain oatmeal. The products are certified gluten free, vegan, non-GMO, and Star K kosher parve.
We sampled the following products:
Dairy Free Cheese: The We Can't Say It's Cheese line includes Hickory Smoked Cheddar–Style Spread, Cheddar–Style Spread, and Mexi Cheddar–Style Dip. Made from Prepared Whole Grain Oatmeal, this product line is remarkably good. They are smooth and spreadable and have a cheddar taste; the Mexi Cheddar has a "kick" of heat and our favorite was the Hickory Smoked Cheddar–Style Spread - the subtle hickory flavor was very good. Use as a spread on crackers, bread, as dips, in soups, over steamed veggies, in mac'n cheese, or baked potatoes – there are so many ways to utilize this product.
Dairy Free Sour Cream: Made from Lima Beans, Oats, Rice, and Oat Bran, it has the look of sour cream. The texture is thick and the taste is tangy and, to us, more like a yogurt. We used it for baking purposes and it worked just like the "real thing." We substituted it for the sour cream in our Blueberry Buckle with Vanilla Crumbs recipe and the result was a moist, delicious cake. We would use it again for our parve, non–dairy baking requirements.
Dairy Free Pudding: Made from Millet, Lima Beans, Rice, Oat Bran, Oats, it is available in three flavors; chocolate, vanilla and butterscotch. We tasted the chocolate and it was creamy, chocolately and very good. For those on a dairy free diet, this is a good dessert alternative.
The WayFare products do not taste like the "real thing" but they are close and are satisfying, and an excellent alternative for those who are on special diets. Also good for the kosher cook who can use the cheese and sour cream products as recipe substitutions when serving a meat meal.
