In 2001 the Lesaffre Group of France acquired the 100–year–old American company Red Star Yeast. Lesaffre is the world's largest yeast manufacturer with production facilities in more than 20 countries around the globe. Lesaffre was founded in 1853 and has grown to be a leader in bread–making yeast and yeast extracts. The company, Lesaffre Yeast Corporation, is the North American subsidiary of the global Lesaffre. The success of Lesaffre is credited to its technical innovation, quality, and reliability, with a passion for bringing superior yeast products to the baking industry. In North America there are three yeast production facilities; two in the USA and a third facility in Mexico. Lesaffre owns and operates the plant in Mexico; in fact, it is one of the newest, state–of–the–art yeast plants in North America. It is run under the same strict quality control and sanitation procedures as our US plants.
Red Star has been a KosherEye family tradition for 3 generations by bakers who were confident that the quality of this yeast gave their challahs and breads that extra “rise.” That may be true, but we of course believed that it was a mother’s or grandmother's special touch!

The new Red Star PLATINUM yeast is designed as a superior baking yeast, to take the fear out of baking. “PLATINUM is simple to use. So forgiving it takes the intimidation out of baking with yeast!” Why? According to Red Star:
Strengthens the dough and improves dough tolerance to variations in kneading, rising, and flour quality
Increases the amount of leavening retained in the dough
Decreases the risk of the dough collapsing after proofing or during baking
Increases oven "spring" and the finished volume of the baked product
