3 tbsp. olive oil
1 large white onion, diced
1 garlic clove, minced
2 lbs. ground beef
1 tsp. salt
1 tsp. ground cumin
1 tsp. smoked paprika
½ tsp. cracked black pepper
¼ tsp. ground chipotle
¼ cup chopped fresh cilantro or parsley
12 (6-inch) corn tortillas, warmed
salsa, guacamole and lime juice
Heat oil in a large skillet over medium-high heat. Once hot, add onion and garlic and sauté, stirring occasionally, until onion is translucent and garlic is golden brown, about 5 minutes, then add beef, salt, cumin, paprika, cracked pepper, and chipotle. Stir until beef is cooked through, about 7-10 minutes.
Once beef is cooked, add cilantro or parsley.
Serve with warmed tortillas, your favorite salsa, guacamole, and a squeeze of lime.
