1 box Jack’s Gourmet Sweet Italian Sausage Patties crumbled
3 Tablespoons olive oil
2 onions chopped
1/2 red bell pepper, chopped
1/4 lb. fresh mushrooms - chopped
1/4 cup ketchup
2 Tablespoons mustard
2 eggs and 1 egg yolk for pastry “wash”
½ cup bread crumbs
1 package puff pastry dough (2 sheets) - defrosted about ½ hour


Sauté onions until brown, remove from pan
In same pan, sauté sausage, peppers and mushrooms until sausage os cooked through
Remove from heat, drain mixture and cool slightly
Mix mustard, ketchup, eggs and bread crumbs with sautéed meat and vegetables.

On a floured surface Roll out puff pastry dough to approx. 12" x 16" size
With the short side facing you, spoon mixture onto dough starting around 2 inches from end
Roll up, and fold in sides to "seal". Repeat process with 2nd pastry sheet
Beat 1 egg yolk with 2 Tablespoons of water.
Brush top of pastry roll and seams

Preheat oven to 350
Line a cookie sheet with parchment or foil. Place filled pastry rolls on top
Bake at 350 approximately 35 minutes or until dough has browned.

With a sharp serrated edge knife, slice straight or on slight diagonal
Serve hot, warm or at room temperature
Makes about 12-16 appetizer portions or 8 dinner portions
