This is absolutely the World’s Best Passover One Pan Matzoh Kugel recipe! Full of onions, mushrooms, celery, carrots, assorted seasonings and moistened with chicken broth – what could be better!
1/4 cup olive oil
1 chopped onion
1 lb. mushrooms, chopped
3 celery stalks, chopped
2 carrots, chopped
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 can chicken broth*
8 ounces water
3 – 3 1/2 cups matzoh farfel
1 beaten egg
In a large frying pan, saute vegetables in oil, until softened. Add seasonings, stir. Add matzoh farfel.
Heat water and chicken broth and pour over mixture. Toss to moisten.
Let cool slightly, add 1 beaten egg and mix.
Spoon into greased baking pan and bake at 350 degrees for about 35 minutes.
* For parve version, use 2 cups water and 2 teaspoons parve chicken bouillion powder
