This dish just screams SPRING—sweet, savory, light and fresh! So easy and so quick!


¾ cup dried cranberries
½ cup pistachio
½ cup kosher for Passover panko crumbs (or coarse matzo meal)
¼ cup olive oil
4 chicken breast cutlets (Do not pound)
Kosher salt and pepper


Preheat the oven to 350F.
Place the dried cranberries, pistachio and Passover panko crumbs In a food processor; Pulse a few times until combined. Add the olive oil and pulse a few more times. Taste and adjust seasoning with salt and pepper. The goal is to attain a balance of sweet and savory.
Place the chicken breast cutlets in a baking pan and evenly coat each breast with the cranberry- pistachio mixture. Press in firmly to create a nice thick crust.
Bake about 25 minutes.
