Passover Farfel Cookies PDF Print E-mail

A dear friend of KosherEye shared this recipe with us - it is one of her favorites.

Ingredients:

2 cups matzo farfel
1 cup matzo  meal
1 cup sugar
2 eggs –  room temperature
1/3 cup oil
1/2 cup nuts – chopped pecans
1/4 cup white raisins or parve chocolate chips (more than 1/4C if you like)
1/4 teaspoon cinnamon
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract

Directions:

Beat by hand the sugar, eggs, & oil. Slowly add farfel and then the matzo  meal.

Add extracts & cinnamon.

Add nuts and raisins (or chocolate chips) last

Use cookie sheet lined with parchment paper. Bake in preheated 325 degree oven for 15 to 20 minutes. Cool cookies before removing from parchment - remove with spatula.

Notes:

Our KosherEye friend uses a convection oven - 300 degrees for 9-10 minutes.
