1/2 cup sugar
3/4 cup olive oil
1/3 cup raspberry balsamic vinegar-or balsamic vinegar
1 tsp salt
8 cups fancy lettuce
2 cups dried cran-raisins or raisins
8 ounces strawberries quartered
1 large mango, peeled, pitted and cubed
1/2 cup chopped red onions
1 cup slivered almonds, walnuts or pecans
In a cruet or jar, combine sugar, oil, vinegar and salt. Cover tightly and shake vigorously; Mix all salad ingredients (except nuts) in a large bowl. When ready to serve, toss salad with dressing. Sprinkle with nuts, toss again and serve.
Yield: 6 - 8 servings
Dressing may be made a day ahead and refrigerated.
For dairy version-add a blue cheese topping.
