Side Dishes

When Vidalia onions are in season, this recipe for Vidalia Onion Casserole is a must. Vidalia onions are sweet, are grown in Georgia and are the official state vegetable. This is a very popular recipe – try it and you will see why!


5 Jumbo Vidalia onions
1/2 cup margarine
l cup Parmesan cheese
20 crispy, buttery crackers, crushed (we use Ritz crackers)


Preheat oven to 325 degrees. Lightly spray a 9 x 13-inch casserole pan.

Slice onion into thin rings.  Melt butter; add onions and sauté until limp & opaque.

Pour half of onions into casserole & cover with half of the cheese. Then add half of the crackers.

Repeat layers, ending with crackers.

Bake uncovered for 30 minutes or until golden brown.
