This copycat Kosher recipe was inspired by an Atlanta friend, Judy Lipis. Our family loves it!
4 skinless, boneless chicken breasts or thighs, pounded or sliced horizontally to about 1/4" thickness. You can also roll out with a rolling pin.
4 -8 slices pastrami
4 slices parve cheese, such as provolone or mozzarella
1/4 cup flour
1 cup Panko crumbs
1 clove garlic, grated
1/4 teaspoon black pepper
2 Tablespoons extra virgin olive oil for crumbs
2 eggs
1/3 cup olive oil for oven frying
Pre-heat oven to 350 degrees.
Put 1/3 cup of oil in an 8x8 glass or ceramic baking dish
Prepare chicken to about 1/4" thickness
Lay strips of pastrami on chicken; then add pieces of cheese.
Roll chicken (like a burrito) as tightly as possible. Secure with a toothpick or skewer.
Season flour with pepper and garlic
Mix the crumbs with 2 Tablespoons of olive oil, which will help them adhere to chicken.
Gently, roll filled chicken in flour, and then in bread crumb mixture
Place seam side down in baking dish; remove toothpicks
Bake about 35 minutes or until chicken is cooked through. Enjoy!

It is not often that I read a cookbook cover to cover in one sitting, but I couldn't put this one down. First, there is the beauty of the book, then the photos by Moshe Wulliger, then the clever &meaningful chapter headings, and the crisp clean fonts. It is simply a pleasure to read, and to cook from!. The recipes, there are 250, are creative , mostly simple and easy to follow.
Even the "tips" (86 of them) are chock full of information, many that a seasoned cook like me found helpful. Cinnamon and ginger are very compatible! Turmeric stains hand....Wear gloves! Peel your celery; no one likes to eat strings. There are 86 more tips/hacks just in the book's introduction. And, most every recipe has a fabulous photo , and her tips & tricks. The recipes are approachable and delicious.
Danielle lives in Jerusalem, and is well known for her popular blog/website peaslovencarrots.com, and her @peaslovencarrots on Instagram. (with over 50,000 followers) She was born and raised in Long Island into a mixed Moroccan and Ashkenaz family. She moved to Israel shortly after her wedding to Eli. Who "woulda"' thought it? ...Grilled cheese in the microwave. Whaattt?
Technology meets an American classic...think buttery, melted cheese on toasted whole wheat bread! The Lekue grill makes it simple to prepare crispy sandwiches, toasted panini, veggie burgers, quesadillas, fish patties and vegetables in the microwave. (Burgers and hot dogs work too...but we've made our grill dairy.)
This unique appliance features a non-stick metal body with red silicone handles for safe movement of food in and out of the microwave. It is easy to use and dishwasher safe as well.
Simply pre-heat the grill for three minutes in a microwave, and then add your food of choice. Clamp the 2 sides of the grill together and microwave again. It even makes grill marks. The process does require a microwave that has a rotating tray. The grill comes with a helpful cooking brochure.
This little wonder is a time saver, and perfect for one or two servings. We think that it makes a great holiday gift or treat yourself!
