Honey Cookies with Vanilla Glaze

A HONEY of a pick-up dessert

Ingredients

Cookie Ingredients
6 Eggs
7 Tablespoons honey
6 cups flour
2 cups sugar
1-teaspoon cinnamon
1-teaspoon baking powder
1-teaspoon baking soda
1-cup oil
1 Tablespoon vanilla sugar*
Pinch of salt

Glaze Ingredients
1 ½ cups confectioners’ sugar
2 Tablespoons almond milk
1 Tablespoon lemon juice

Directions

For the cookie
With an electric mixer, beat eggs and honey until combined. In the same bowl, add flour, sugar, cinnamon, baking powder, baking soda, oil, vanilla sugar and salt. Mix well. Refrigerate dough until firm, about 2 hours. Preheat oven to 350. Line 2 baking sheets with parchment. Using a small cookie scoop, form balls and place on baking sheet, about 1 ½ “ apart. Press down slightly and bake for about 10-12 minutes. Let cool. 
For the glaze 
In a small bowl, whisk confectioners’ sugar, milk and lemon juice Dip cooled cookies into glaze, and allow to set.

Notes
* We used 1 teaspoon of vanilla extract in place of vanilla sugar
