Pomegranate molasses

Excellent addition to poultry and meat recipes, salad dressings and spirited beverages. We also love it as a glaze for salmon, and a topping for ice cream. The syrup is both sweet and pungent. This recipe was inspired by Alton Brown of The Food Network.  It is a staple in the KosherEye recipe collection.


4 cups pomegranate juice like Pom Wonderful
1/2 cup sugar 
1 Tablespoon fresh lemon juice

Combine ingredients in a pot. Stir until sugar dissolves,  and simmer on low, uncovered for about 50 minutes, until reduced by about 1/2.  Refrigerate for a few hours. It will thicken more when cooled


Recipe: Kosher, parve - Makes about 2 cups pomegranate syrup, and will be usable for months if kept covered and refrigerated.
