Pomegranate molasses

Excellent addition to poultry and meat recipes, salad dressings and spirited beverages. The syrup is both sweet and pungent. This recipe was inspired by Alton Brown of The Food Network.  It is a staple in the KosherEye recipe collection.


4 cups pomegranate juice like Pom Wonderful
1/2 cup sugar
1 Tablespoon fresh lemon juice

Combine ingredients in a pot. Stir until sugar dissolver,  and simmer uncovered for about 50 minutes, until reduced by about 1/2. 
Refrigerate for a few hours. It will thicken more when cooled


Recipe: Kosher, parve - Makes about 2 cups pomegranate syrup, and will be usable for months if kept covered and refrigerated.
