This is a classic recipe reinvented. It was inspired by our friend Gloria, who got it from her friend Jeanie. Needless to say it is delicious. Make it with butter when serving a dairy meal; with olive oil or margarine when you need a parve side dish.
Ingredients
2 large onions
4 potatoes sliced thin using a mandolin or sharp knife
1 ½ sticks melted margarine, melted butter or 1 cup olive oil
1 teaspoon paprika
1 teaspoon chopped parsley
1 teaspoon salt
1/2 teaspoon black pepper
Optional: 1 tsp. chopped chervil or rosemary
Directions
Grate onions or slice very thin. Slice potatoes about 1/8" thick Seasib with paprika, parsley, salt and pepper
In a ceramic casserole dish or pie dish, layer potatoes, onions and butter or oil mixture
Repeat layering about 3 times, ending with butter mixture.
Preheat oven to 425 degrees
Bake for 20 minutes then reduce to 375 for about 20 minutes or until potatoes are done.
Notes
If making this as a dairy side, consider adding a some parmesan cheese
