This is a spectacular salad inspired by a popular dish served at the Longhorn Steak House. Make it parve,meat or dairy. 

Ingredients

Salad Ingredients
3 cups mixed lettuces and salad greens
1/2 of a red onion, very thinly sliced
Approximately 1 cup of thinly sliced strawberries
Approximately 1 cup halved green grapes
1 - 11 ounce can mandarin oranges, drained
1/2 cup feta cheese
1/2 cup pecan halves, glazed if possible 

Strawberry Vinaigrette Dressing
1 cup strawberries, stemmed, cleaned and dried
2 tablespoons honey
5 tablespoons apple cider vinegar or balsamic vinegar
1/3 cup extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Dressing Directions 
Put all Vinaigrette ingredients in a blender and pulse until pouring consistency or use an immersion blender. If too thick, add a few drops of water.

Glazing Pecans:
In a small frying pan, melt 1/4 cup sugar in 1/2 cup butter; Add 1/2 cup pecans and simmer until mixture thickens
Let cool on waxed paper or parchment

Prepare salad ingredients. Combine all ingredients just before serving. Toss with vinaigrette. If needed for a parve or meat meal, simply omit the cheese.

Notes

Serves about 8 as an appetizer
Garnish with fresh mint and extra feta
Add salmon and feta, or chicken (no cheese) to make this an scrumptious entree
