KosherEye Featured Cookbook

FoodFamily_Tradition
By Lynn Kirsche Shapiro

Food, Family, and Tradition: Hungarian Kosher Family Recipes and Remembrances by Lynn Kirsche Shapiro, a daughter of holocaust survivors, contains more than 150 original family recipes with full-color photographs. But on an equal footing with these authentic recipes are the stories which motivated Lynn to write the book. Through the first half of the book she shares her family history, which is a Holocaust story. Through photos, diagrams, handwritten letters, maps, etc., she recounts the lives of her father and mother, Sandor and Margit Kirsche (founders of Chicago's iconic Hungarian Kosher Foods, the largest all-kosher supermarket in the Midwest).

"The voice of her family, one family becomes the voice of many who lived in that time and place. And their survival becomes a testament to the courage and resilience of all Survivors who had the courage and strength to rebuild their lives.
"My hope is that through my family's stories you will see a picture of the community that was suddenly and brutally extinguished, the dedication to Jewish law that was solid and resilient, and the warmth of the Jewish community. I hope that through these centuries-old recipes you will get a taste of the culinary tradition of the Jews in Hungary and Czechoslovakia. Finally, I hope that you will feel the dedication of the Holocaust survivors—those who remained in Europe, those who went to Israel and those who came to the States."

The recipes are more than just traditional dishes; they are each heirlooms reflecting a time that was. And a way of life. They reflect one family's determination and eventual success to remake themselves and create meaningful lives.

Lynn shares memories and recipes from the families of other Holocaust survivors too. The book as well as the recipes are "haimische", extremely personal and quite touching. Each recipe offers an intimate glimpse into a time gone by, but each has been updated and clarified for a contemporary kitchen.

As the author knows well, the language of food is one way to hold on to a heritage and identity, binding generations and connecting past with present.

On a special note, we wish Lynn's mother Margit, who is now 91, a Shana Tova, a year of good health and happy cooking!

Holocaust_Survivor_Cookbookssm

The Holocaust Survivor Cookbook and its sequel Miracles & Meals provide food for both body and soul. Each recipe is accompanied by a personal story of the Holocaust – of courage, loss, suffering, love, support, caring, life, death and miracles of survival. The book shares photos of Holocaust victims and survivors along with hundreds of recipes and memories. Each of the stories and recipes was lovingly collected from around the world by Joanne Caras and her family.

Sales from "The Holocaust Survivor Cookbook" and the second volume "Miracles & Meals" benefit the Israeli soup kitchen Carmel Ha'ir. The goal is to sell 6 million cookbooks as a tribute to the memory of those Jews who did not survive the Holocaust. In addition, Jewish groups around the world offer the books as fundraisers. Both cookbooks are available to be downloaded as e-books as well. To date, over a million dollars has been raised for charities from the sale of these two amazing cookbooks.

The Kosher Baker, Brandeis University Press                   The Holiday Kosher Baker, Sterling Publishing

About Paula Shoyer
Similar to "the Julia" (the culinary icon we all loved), Paula Shoyer, the author of The Kosher Baker and The Holiday Kosher Baker, has a very worldly background which took her to Switzerland and France. Although trained as an attorney, she followed her passion and launched her culinary career in Europe when she journeyed to Paris to enroll in the famous French cooking school, the Ritz-Escoffier Ecole De Gastronomie Francaise. Upon receiving her culinary diploma in 1996, she returned to Switzerland and started practicing her new baking skills by converting wonderful dairy French desserts into kosher, parve versions. The Shoyers returned to the United States, and in 2002 she started Paula's Parisian Pastries Cooking School in the Washington, D.C. area.
Paula has appeared on Food Network's Sweet Genius, is a frequent TV news guest, and edited the popular cookbooks Kosher by Design Entertains and Kosher by Design Kids in the Kitchen (both from Mesorah Publications, Ltd.). Paula lives in Chevy Chase, Maryland, with her husband and four children. Visit Paula at www.thekosherbaker.com.

Each of Paula's two books, The Kosher Baker and The Holiday Kosher Baker, shares her amazing talent and baking repertoire. She currently travels globally to instruct and inspire both budding and experienced bakers on how to create luscious pastry, breads and confections without intimidation. Paula gently guides her audiences to expand their baking reach. We suggest that both of these books should be part of a home baking library.

The Kosher Baker By Paula Shoyer
Brandeis University Press

Paula Shoyer shared both her culinary experience and passion for baking in The Kosher Baker, her first cookbook,. Paula's philosophy of baking is, "it does not have to be difficult. Home baked desserts are so much healthier that packaged desserts and easier to bake than you think." And The Kosher Baker is a testament to that. The book features a selection of over 160 dairy-free dessert recipes including cookies, tarts, pies, cobblers, cakes, scones and even four recipes for challah-all dairy free!
The Kosher Baker contains a varied range of recipe selections, clear and precise directions, storage tips for each recipe, beautiful pictures (including "how to" twist a Babka and "how to" braid a challah), and best of all - the recipes are all parve.

The Holiday Kosher Baker By Paula Shoyer
Sterling Publishing

Paula Shoyer's second book is a collection of 120 recipes, celebrating and complementing each holiday of the Jewish year, with recipes for gluten-free, nut-free, low-sugar and vegan desserts, and 45 Passover desserts.

It's a new era for Jewish home bakers. Kosher baking ingredients have evolved and proliferated. Paula offers a thoroughly modern approach to Jewish holiday baking that includes both contemporary and traditional selections. There are simple, quick choices, even one bowl creations–perfect for everyday family fare – and for easy entertaining. There are also amazing recipes for fancier multiple step pastries, with accompanying color photos.
This is a must-have kosher baking cookbook for the Jewish kitchen—and one to enjoy at holidays and throughout the year.

Meet The Sisterhood: From Left to right
Merelyn Chalmers - Food is love and love is food
Paula Horwitz - The former barefoot farm girl with a love of food and family
Lisa Goldberg - I am a fresser, dreaming, shopping cooing sharing searching
Jacqui Israel - Entertaining has become my thing; Immersion into the sisterhood has given me confidence to cook
Lauren Fink - Love to feed the family good simple food, and plenty of it
Natanya Eskin - Treasures the memory of her mother cooking up her Polish heritage and her Russian-Shanghai mother-in-law

In 2006 this group of Sydney Jewish women came together to share recipes and talk about food. They often heatedly—discussed the merits of different recipes. "Over a chopping board and a hot stove, with many cups of tea and the odd piece of cake, a unique bond began to form. We started out as a group of individuals and we are now a sisterhood". All Monday Morning Cooking Club profits go to charity.

You will want to buy this book for yourself, and gift it to your friends. The photography is spectacular; the recipes mouthwatering and the stories and memories about each dish, personal and heartwarming. Yotam Ottolenghi says: "You will want to eat everything"; Nigella Lawson is a fan, and now so are we. We received an advance copy of the book, and have already read it three times, and made several of the recipes. We just couldn't resist. If you read this cookbook cover to cover- you will want to join the club — but unless you live in Australia, a virtual membership on Facebook, Google Circles, or their website Monday Morning Cooking Club will have to do. This is the second book of the series (No we haven't seen the first which we understand was a sensation in Australia!).

Each of the 100 recipes is a culinary treasure, and offers a glimpse into a family kitchen. Most of the recipes are family heirlooms, several updated with a contemporary twist. The chapter headings say it all- fressing, comfort, feasting, tradition. While all of the recipes are drawn from the Jewish community, the contributors cross multi- cultural boundaries (Russia, Hungary, China, South Africa and more), and impart a depth of global flavor and richness.

From the Sisterhood:
"This is an heirloom cookbook of the very best, most treasured family recipes, and each will feed a body and soul. It is meant to nurture, nourish and inspire. In this book, each one of the six of us shares the story of someone close to our heart who still stands beside us in the kitchen either literally or spiritually."

The Modern Menu - Encore Giveaway!
Simple. Beautiful. Kosher.
By Kim Kushner, Gefen Publishing House

ModernMenu-E

This book reminds us of a painting, both modernistic and contemporary. It shines visually with clean minimalistic simplicity, contains extremely appealing, easy to follow, fresh and innovative recipes, and is complemented by the gorgeous photography of Andrew Zuckerman.

KimKim Kushner, the author comes from a large family. Her Moroccan-born mother was raised in Israel in a family of eight siblings. While spending childhood summers in Israel with her extended family, Kim learned to cook by eating, and helping to prepare family feasts.

She pursued her interest in food preparation by studying at the Institute of Culinary Education in Manhattan. She then worked at Food & Wine and Chile Pepper magazines, creating recipes for subscribers to try at home.
Kim's skill at preparing gourmet kosher dishes from simple and fresh ingredients resulted in positions as a private chef in New York City, and teaching private cooking classes from her own kitchen.

Her food perspectives are demonstrated in her cookbook — and can be summarized as fresh, healthy, seasonal and local. Kim continues to study and teach cooking. Her theory: anyone can cook, and everyone should cook. Kushner's recipes contain easily sourced ingredients, and step-by-step instructions for both the novice and experienced cook. What a wonderful gift for yourself or a friend. The Modern Menu is one of those cookbooks that would be comfortable in any kitchen, kosher or not.

Enjoy Kim's recipes for:
Balsamic Marinated Chicken
Crispy Cauliflower with Tomatoes and Dill
Spinach, Haricots Vert, and Avocado Salad with Crunchy Honey Dressing
