Mayim Bialik with Dr. Jay Gordon
Da Capo Press/Perseus Books Group

Mayim Bialik is currently starring on the CBS hit comedy "The Big Bang Theory", where for six seasons she has played the Emmy nominated role of Amy Farrah Fowler. The show won the 2013 & 2014 People's Choice Award for Favorite Network TV Comedy.
Bialik was born in San Diego, California to first generation Jewish American parents, who are both documentary filmmakers and teachers. She played the young Bette Midler in "Beaches", played the quirky Blossom Russo for 5 years on the NBC television sitcom "Blossom", and also had guest roles on some of television's most beloved shows of the 1980s and 1990s. Dr. Mayim Hoya Bialik (yes it's Dr. Bialik) is quite an amazing individual. After "Blossom", she pursued and earned degrees in Neuroscience, Hebrew and Jewish Studies, and went on to the Ph.D. Program in Neuroscience, at UCLA. She writes weekly for the Jewish parenting site Kveller.com about her life as an observant Jewish actress and mother, studies through Partners in Torah, and speaks for a variety of organizations around the United States.

And this brings us to her 2nd book "Mayim's Vegan Table - More Than 100 Great-Tasting Recipes from My Family to Yours". Although not specifically a kosher cookbook, this is absolutely a kosher cookbook. Every recipe can be prepared kosher. Mayim's Vegan Table shares over 100 plant-based recipes that she prepares at home for her two boys, Yes, she is also a working mom, so she shares recipes that are quick, filling and of course delicious. To ensure balanced nutrition and meal strategies for a healthful plant based diet, Mayim has partnered with well-known Santa Monica pediatrician Dr. Jay Gordon the book's co-author.

We especially like the Asian, Mexican, Italian and Jewish inspired recipes. There are kugels, quick breads, cakes and cookies; including Mayim's most popular at home recipe- baked ziti. You will also find recipes for hot pretzel challahs (Yumm-we have tasted these on a past trip to LA), vegetarian matzoh ball soup, tsimmes and even Passover friendly dishes such as quinoa burgers, salads and, DIY parve raw nut cheese, dips and dressings. Learn what a plant-based pantry should look like, and which kitchen gadgets are essential. Yes, after reading this book, and trying the recipes, you may be tempted to go vegan!

The Artisan Jewish Deli at Home
By Michael C. Zusman and Nick Zukin
Andrews McMeel Publishing

AM_Deli_cover_400wDeli food is back and enjoying a global resurgence. The foods of the traditional Jewish deli such as corned beef, pastrami, chopped liver, pickles, borscht, rugelach, blintzes, bagels, bialys and schmaltz are trending. Agreed, most are not particularly heart healthy, such as those memorable and legendary overstuffed deli sandwiches, but certainly, even health conscious eaters can treat themselves occasionally, and in moderation. In their book The Artisan Jewish Deli at Home co-Authors Nick Zukin and Michael Zusman share 100 recipes for cherished Jewish deli foods, some updated, some seasonal and some in their pure traditional versions. And best of all, they can all be made from scratch, at home.

The book provides the tools and recipes to create authentic and nostalgic dishes. The photos make us hungry, and the recipes, are mouthwatering and easy to follow. "The typical little-of-this-little-of-that Jewish cooking style instructions are pinned down in this collection of artisanal style Jewish recipes, tips and tricks. Deli fans and DIY-ers alike will enjoy this book."

Now about the authors, who are both from Portland, Oregon:
Michael Zusman is a full time, state trial judge by day. As a relaxation technique, he took a bread-baking class several years ago, and developed a serious passion and love for baking. In addition, he is a freelance restaurant food writer at night.

Nick Zukin, is the co-owner of Kenny and Zuke's Deli in Portland, a popular restaurant which focuses on artisanal foods, like house-made pastrami and hand rolled bagels. (No, sadly the Deli is not kosher at this time, but the book shares many of its much beloved recipes). Nick is also a well-known food blogger in the Portland area.

We suggest this book as an excellent addition to a well-stocked Jewish food cookbook library. The recipes are simply wonderful, easy to follow and provide a wide range of choices for anyone who would like to prepare culturally authentic or updated Jewish deli food at home.

KosherEye Note:
A few of the recipes have both meat and dairy combinations listed in the ingredient list, and will have to be tweaked for the kosher home. This is easy to do. However, if you have any questions, simply send us an email. We're happy to help.

Cooking with The Kosher Butcher's Wife
Celebrating with The Kosher Butcher's Wife
By Sharon Lurie, Random House Struik Publishers

Sometimes when reading a cookbook, you feel that you are forging a friendship with the author. In this case, geography is an issue; South Africa is a long way from Atlanta. Yet after reading these books, that friendship seems so real and we feel so welcome in the author's life and at her table. Plus, the books are simply fun!

Cooking_and_Celebrating_with_cookbooks_sm

In addition to creative recipes and gorgeous photos, these two books by Sharon Lurie (who IS the Kosher Butcher's wife) are complete with humor, meaningful anecdotes, stories, family insights, and an obvious love and passion for Jewish culinary heritage.

Her first book – Cooking with the Kosher Butcher's wife – shares her secrets and vast knowledge of meat cuts – how to select them, cook them, season them and serve them. Sharon's husband's family has owned and operated Johannesburg's Nussbaum's Kosher Butchery since 1936. In addition to the recipes, we found the photos and cooking tips relating to meat cuts extremely informative.

The second book, Celebrating with The Kosher Butcher's wife – takes us through the Jewish cooking year and shares mouthwatering dishes for holidays, Shabbat and any day meals. The recipes are delightful, and photos are spectacular.
Our great desk companion Google came in handy as we read through these books and tried some of the recipes. You may not know what "mealie meal" (similar to polenta) or castor sugar is (superfine sugar), but you will and you should. We were very intrigued by the recipe names and of course some of the ingredients. Most ingredients are readily available in the U.S., or can be easily substituted with familiar brands.

These cookbooks are so creative, so happy, so appealing. A KosherEye gift yourself and gift others selection. Be sure to put these books on your 'consider to buy list' prior to Passover. The Passover recipes appear mouthwatering. Well more on that another time.

Enjoy these sample recipes by Sharon Lurie:
Smilg, Smith, Santiago - It's still a Spanish (chicken) Dish!
Breakfast Muffin Macon Pots (faux bacon and eggs) – easily doable with Jacks Gourmet Facon
Asparagus Sticks and Couscous Crunch
Old Fashioned Steak Pie and Minted Peas – A bit of a British flavor
Cranberry Lamb

If you are feeling lucky, enter our giveaway... Sharon and her publisher have provided a set of each of the two books for 2 lucky winners.

Remaining Kosher, Volume One
A Cookbook for All with a Hechsher in their Heart
By Lauren Stacy Berdy

Remaining_Kosher_cover

Disclosure here: This is the first complete cookbook that we have ever read "cover to cover" on the iPad. Yes, we regularly use cookbook apps and recipes from the Internet; yes, our iPad is right at home in our kitchen thanks to our ChefSleeve iPad protective covers and our amazing  ChefSleeve iPad stand. But reading and using this innovative cookbook was a new and exciting experience.

Lauren Berdy writes: What's a Jewish Papa to do when his daughter wants to become a chef. It was 1976 and that is not what he had in mind for his daughter. Lauren Stacy Berdy has cooked professionally for over 30 years and in kosher kitchens for thousands of hours. Her book, Remaining Kosher is an open invitation to look over her shoulder in the kitchen and to journey to ethnic markets along with her. She studied at LaVarenne Ecole de Cuisine, Paris, earning Le Grande Diplome d'Etudes Culinairs.

Now to the recipes – they are creative and fabulous. You can tour the world with Lauren's culinary creations. She shares recipes for many of the spices and dishes of India, China, Hong Kong, Mexico and more. We were delighted with the variety of recipes for hard to find kosher dishes and her step-by-step instructions on how to make recipes like ghee, garam masala, date syrup and chutneys. And then there are the soups, sides, pastas, entrees, breads and desserts. Some are classics with instructions on how to prepare them, and some take us on a culinary journey. We loved Chef Lauren's Chicken Fried Rice. Her Chinese Cold Poached Velvet Chicken will become a staple at your Shabbos table. Her desserts are incredible. (We just about licked the dish when we whipped up her Jam Crostata.) Yes, we are still cooking our way through the book.

Lauren not only shares recipes, but she gives the reader exact instructions with pictures and words on how to create the dish and how to use unfamiliar ingredients. The recipes come to life through the beautiful pictures. Every photograph is vibrant, colorful and so realistic on the iPad.

If you are one who make notes and highlights items in cookbooks, you'll be delighted to find that you can do that in this "e-book".  There is also a built-in capablity of copying and sharing recipe instructions and notes via email, texting, Twitter, and Facebook!

Lauren has won us over to the world of e-cookbooks, which by the way can save money and space. Yes, as we've shared previously our bookshelves are bulging; so we can certainly appreciate a virtual bookshelf. Remaining Kosher shares a wealth of recipes and if you are an adventurous cooking spirit, it will be a treasure in your kitchen. Visit Lauren for more information and sample pages laurenstacyberdy.com

Remaining Kosher may be purchased through iTunes or the Apple iBooks App on your iPad or your Mac. You may also buy it here:

Gluten_free_cookbook
Gluten-Free, Dairy-Free, Corn Free, Low Glycemic and Kosher
By Vicky Pearl, Moznaim Publishing Company

It's 2014, time for resolutions. Many have decided to give up gluten (yes that's one of the top 10 new food trends). Due to the rising incidence and awareness of gluten intolerance and sensitivity in the American population as well as the heightened focus on wellness and healthy eating, there is a growing demand for gluten free products and meals.

Gluten free Goes Gourmet is an easy to follow cookbook, with delicious recipes and menu ideas. It is a comprehensive kosher gluten-free cookbook featuring over 100 original gluten, dairy, and corn-free recipes and photos, for the hundreds of thousands of people who are now eating or want to eat gluten-free, many of whom also keep kosher. The book informs and educates about the virtues of "eating healthy and well." Vicky Pearl is a respected NY-based nutrition coach, consultant and teacher, who has been in practice for 20 years. She has shared her expertise with numerous clients to help them create and maintain a gluten-free diet – sharing not just the "why" but also the "how". Through the years, she discovered that many who were gluten intolerant were also dairy intolerant.

The book shares over 100 recipes for Dips & Drinks, Sides, Mock Dairy, Meats. Poultry, Breads and Desserts and more.. There are recipes for Chicken Soup & Knaidlach; Brisket & Chicken Rollups; Baked Salmon in Marinade; Mock Cheese Blintzes; Potato Kugel and one of our favorites, "Cheesecake". Vicky also provides extensive information on alternative pantry items and ingredients. Learn about which flours, sweeteners and oils to use; which pantry staples to keep; and best of all how to make a gluten free diet delicious.
